Equipment

  • Mixing bowl

Ingredients

  • ¼ cup extra virgin olive oil
  • 1 tablespoon dark brown sugar
  • 1 tablespoon sea salt and freshly cracked black pepper
  • 1 teaspoon minced garlic
  • ¼ cup aged balsamic vinegar
  • ½ medium-sized red onion
  • 4 ripe Roma tomatoes
  • 1 tablespoon fresh basil chopped

Instructions

Step 1: Prepare Your Ingredients

  • Start by gathering all of your ingredients. Chop your Roma tomatoes and slice the red onion thinly. Fresh basil is next; a quick chop will release its lovely aroma. It’s always better to have everything prepped so that cooking flows smoothly.

Step 2: Whisk the Dressing

  • In a mixing bowl, combine the extra virgin olive oil, dark brown sugar, sea salt, black pepper, minced garlic, and aged balsamic vinegar. Whisk it together until it’s outstandingly cohesive. This makes the flavor base for the tomatoes.

Step 3: Combine Vegetables

  • Add the chopped tomatoes and sliced red onions into the bowl with the dressing. Toss everything together gently to coat the veggies well in that rich mixture.

Step 4: Let It Marinate

  • Allow the mixture to sit for about 10-15 minutes. This will let the tomatoes and onions soak up those flavors beautifully. The juices from the vegetables will mix with the dressing, creating a fantastic sauce.

Step 5: Serve with Chicken

  • Grill or bake your chicken as desired. Once it’s done, plate your chicken and generously spoon the balsamic tomato mixture over it. Garnish with fresh basil if you’d like.

Notes

  • Quality Matters: Use high-quality balsamic vinegar. The difference is noticeable.
  • Let it Sit: The longer the mixture sits, the more pronounced the flavors will become.
  • Add More Veggies: Feel free to toss in some bell peppers or zucchini for a colorful twist.
  • Make It Ahead: This dish holds up in the refrigerator for a day or two, allowing for easy meal prep.
  • Balance Flavors: Adjust the brown sugar and salt according to your taste. Everyone’s flavor preference can differ.
