Ingredients
  

Carne Asada Sandwich Assembly:

  • 2 telera rolls
  • ¼ cup crumbled cotija cheese
  • 1 small avocado mashed
  • 1 cup shredded iceberg lettuce
  • 1 vine-ripened tomato thinly sliced
  • 1/8 small red onion thinly sliced
  • ¼ cup refried beans optional, for extra creaminess
  • 12 slices pickled jalapeños
  • 4 dashes hot sauce optional, for a spicy kick
  • ½ teaspoon lime juice optional, for added brightness
  • 1 tablespoon mayonnaise optional, for extra richness

Step 1: Marinate the Steak

  • First, start with your beef. I recommend using flank steak or sirloin for their great flavor. Marinate your meat with lime juice, garlic, olive oil, and your favorite spices. Let it sit for at least an hour, but if time permits, overnight in the fridge is best. This allows the flavors to penetrate the meat.

Step 2: Grill the Steak

  • Preheat your grill or a cast-iron skillet to medium-high heat. Grill the steak for about 4-6 minutes on each side, depending on how you like it cooked. Aim for medium-rare to keep it juicy. Use a meat thermometer if you need to be certain. Once done, remove it from the heat and let it rest for about five minutes.

Step 3: Prepare the Bread and Toppings

  • While the steak rests, slice your telera rolls in half, and lightly toast them on the grill or in a pan until golden brown. This not only adds flavor but also enhances the texture.
  • In a separate bowl, mash your avocado with lime juice. Slice the tomato, onion, and any other desired toppings you have handy.

Step 4: Assemble Your Torta

  • Now it’s time for the fun part—assembly! Start with the bottom half of the toasted telera roll. Spread a layer of mashed avocado over it. Next, add a generous helping of refried beans, if using, then stack on the sliced steak. Pile on the lettuce, tomato, sliced onion, jalapeños, and sprinkle with cotija cheese. Drizzle hot sauce on top if you’re feeling adventurous, and cover with the other half of the roll.

Step 5: Serve and Enjoy

  • Cut your torta in half if you’d like, serve with a side of chips or guacamole, and prepare for an explosion of flavor with every bite.
