  • 1 large egg
  • 454 grams ground beef roughly 1 pound
  • ½ teaspoon freshly ground black pepper
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon savory oyster sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 5 soft burger rolls

Burger Sauce:

  • ¼ cup tangy ketchup
  • ½ cup creamy mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 2 teaspoons sweet pickle relish
  • ½ teaspoon freshly cracked black pepper

Instructions
 

Step 1: Gather Your Ingredients

  • Start by collecting all the ingredients. This is a secret chef’s trick: ensure everything is within reach before you begin. It makes the process smoother and faster.

Step 2: Mix the Meat

  • In a large bowl, combine the ground beef, egg, black pepper, olive oil, oyster sauce, garlic powder, smoked paprika, and onion powder. Use your hands to mix this until it’s just combined. You don’t want to over-mix it, or your patties will become tough.

Step 3: Form Patties

  • Divide the meat mixture into equal portions. I usually make five patties. Gently shape each portion into a round disk, keeping in mind they will shrink slightly while cooking.

Step 4: Preheat the Grill or Pan

  • Heat your grill or a skillet over medium heat. Adding a little oil helps prevent the patties from sticking. If you’re using a grill, ensure the grates are clean.

Step 5: Cook the Patties

  • Place the patties on the hot grill or skillet. Cook for about 4-5 minutes on each side, depending on how well you like your burger. About one minute before they are done, place a slice of cheese on top to melt.

Step 6: Prepare the Burger Sauce

  • While your patties are cooking, mix the ketchup, mayonnaise, lemon juice, Dijon mustard, sweet pickle relish, and black pepper in a small bowl.

Step 7: Toast the Buns

  • In the last minute of cooking, throw your burger rolls on the grill to toast them lightly. This adds a lovely crunch and enhances the flavor of the burger.

Step 8: Assemble the Burger

  • Now, it’s time to build your masterpiece. Spread a generous amount of burger sauce on the bottom bun, place the cheesy patty, and crown it with your favorite toppings—lettuce, tomato, or onions.
