- 10 large eggs beaten
- 2 cups half-and-half or light cream
- 1 teaspoon pure vanilla extract
- Kosher salt and freshly cracked black pepper to taste
- 14 slices white bread cut into 1/2-inch thick pieces
- 12 ounces Gruyère cheese freshly grated (about 3 1/2 cups)
- 14 thin slices Black Forest ham
- 2 tablespoons unsalted butter plus extra for greasing the baking pan
- Nonstick cooking spray for greasing the foil
- 1/4 teaspoon ground cinnamon for a hint of spice
- 1 tablespoon fresh thyme chopped (optional, for added herby depth)
- Powdered sugar for dusting
- Warm maple syrup for drizzling (optional)
- Seedless raspberry jam for serving (optional)
Step 1: Prepare the Egg Mixture
Start by beating the eggs in a large bowl. Once they’re nice and fluffy, add the half-and-half or light cream along with the vanilla extract. Mix in salt, pepper, and ground cinnamon. This will create the custard base that gives the French toast its rich flavor.
Step 2: Soak the Bread
Take your bread slices and immerse them in the egg mixture. Allow them to soak for at least 10 minutes, ensuring each piece is evenly coated. If you want an even richer flavor, let them sit for up to an hour. Don’t forget to flip them halfway!
Step 3: Assemble the Sandwich
Preheat your oven to 350°F (175°C). Take a baking dish and grease it with some butter. Lay out half the soaked bread slices, sprinkle half the grated Gruyère on top, and layer the slices of Black Forest ham. Top with the remaining cheese, then finish with the other half of the soaked bread.
Step 4: Bake
Cover the dish with foil and bake it for 30 minutes. After this, remove the foil and bake for an additional 15 to 20 minutes until the top is golden and a little crispy. The gooey, cheesy goodness inside should be perfectly melted.
Step 6: Serve
Once the French toast croque madame is golden brown and bubbly, take it out of the oven. Cut it into squares and top each with a sunny-side-up egg. Dust with some powdered sugar, if you like, for a sweet finish. Drizzle with warm maple syrup or serve with raspberry jam on the side.
- Use Day-Old Bread: Stale bread absorbs the custard better. Fresh bread could become too soggy.
- Experiment with Cheeses: Gruyère is a classic, but feel free to mix in other cheeses like Swiss or a touch of provolone for added flavor depth.
- Make It Ahead: You can prepare the dish up to the baking step the night before. Just keep it covered in the fridge and pop it in the oven in the morning.
- Don’t Skip the Egg: The egg on top is what makes the croque madame different from a regular croque monsieur. It adds richness and color, so be generous!
- Season Well: Don’t underestimate the importance of salt and pepper. They enhance the flavors beautifully.
