You wouldn’t believe the plethora of protein-packed recipes I’ve been cooking up lately. But today, I’m particularly excited to share my all-time favorite: the cinnamon sugar protein donut recipe! These donuts are not just any donuts; they combine a great taste with a nutrient-rich punch.

Ingredients
  

Donut:

  • 2 large eggs lightly beaten
  • 7 tablespoons of water
  • 2 tablespoons of oil or unsweetened apple puree
  • A pinch of freshly grated nutmeg
  • A pinch of ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 box of Proteinfull Baking Classic Yellow Cake Mix

Coating:

  • 1 tablespoon finely chopped walnuts
  • 1 teaspoon melted coconut oil
  • ¼ cup erythritol sweetener
  • 1 teaspoon ground cinnamon

Instructions
 

Step 1: Preheat Your Oven

  • Preheat your oven to 350°F (175°C). My oven usually takes about 10 minutes to reach the desired temperature. It gives me just enough time to prepare the donut batter.

Step 2: Prepare the Donut Pan

  • Lightly oil a donut pan. You can use coconut oil for an extra hint of flavor. Trust me, it’s worth the little extra effort.

Step 3: Mix Wet Ingredients

  • In a large bowl, whisk together the lightly beaten eggs, water, oil (or apple puree), vanilla extract, nutmeg, and cinnamon. Make sure the mixture is smooth.

Step 4: Add Dry Ingredients

  • Add the Proteinfull Baking Classic Yellow Cake Mix to the bowl. Gradually incorporate the dry ingredients into the wet mix. Stir until everything is well combined and the batter is lump-free.

Step 5: Pour Batter into Donut Pan

  • Carefully pour or pipe the batter into the greased donut pan, filling each mold about three-quarters full. Tip: Using a piping bag makes this process way easier!

Step 6: Bake

  • Place the pan in the preheated oven. Bake for about 15-18 minutes. Keep an eye out; they’re ready when a toothpick inserted comes out clean.

Step 7: Preparing the Coating

  • While the donuts are baking, mix erythritol sweetener and ground cinnamon in a small bowl. In a separate small bowl, melt the coconut oil.

Step 8: Coat the Donuts

  • Once baked, remove the donuts from the oven and let them cool slightly—about 5 minutes. Brush the top of each donut with melted coconut oil immediately and then dip into the cinnamon-erythritol mixture.

Step 9: Garnish and Enjoy

  • Sprinkle with finely chopped walnuts for an added crunch. Voila! You have a batch of delicious cinnamon sugar protein donuts ready to be devoured.
